High-Protein Keto Amaranth Bar Recipe

While the spirit is always high, fasting sometimes leaves me craving for something that boosts my energy levels without kicking me out of my Ketosis. That’s why I have created these High-Protein Amaranth Energy Bars that are likely to become your Navratri go-to as well.

Ingredients
  

  • 1/2 Cup Total (Pumpkin Seeds and Sunflower Seeds Combined)
  • 1/4 Cup Sliced Dry Coconut
  • 2 Cups Puffed Amaranth
  • 1 Cup Dates (Seeds Removed)
  • 1/2 to 1/4 Cup Peanut Butter

Instructions
 

  • Put a pan over low heat to dry roast pumpkin and sunflower seeds together for 3-4 minutes until fragrant.
  • Also, add sliced dry coconut into this mixture and stir for 1-2 more minutes until it turns slightly golden.
  • Remove from the pan to a bowl and let it cool.
    Now, add puffed amaranth in the same pan and roast for 1-2 minutes while stirring continuously.
  • Remove from heat and set aside.
    Take a grinder and add roasted seeds and dates in batches until they form a coarse, sticky mixture.
  • Transfer the grinded mixture into a large mixing bowl.
    Add puffed roasted amaranth into this bowl and mix well.
  • Add peanut butter to the mixture for binding and shaping the bars. Make sure to blend everything properly.
  • Now, add this mixture to silicone molds or spread it evenly on a flat surface.
    Let it sit in your refrigerator for 1-2 hours.
  • Once firm, demold the energy bars from silicone molds or cut the bars (if set on a flat surface), and enjoy.
