Keto Aloo Halwa Recipe with Cauliflower

You’ve probably guessed it from the title—"cauliflower" is my go-to potato substitute. After boiling and blending in a mixer, cauliflower mimics the consistency and softness of mashed potatoes. This makes it an ideal low-carb base for my keto-friendly halwa.

- Cauliflower florets 250g
- Ghee/Clarified butter 1/4 cup
- Stevia sweetener 1/2 cup
- Saffron strings 5-6
- Cardamom powder 1/2 tsp
- Almond Slivers 10g
Add chopped cauliflower florets to a saucepan with water.
Leave it on medium flame to boil for 5-10 minutes so that the florets become tender.
Once boiled, take it off the heat and let it cool.Now, take another pan and put 1/4 cup ghee/clarified butter in it over medium flame. Let ghee heat for a while and then add the pureed cauliflower in it.Keep stirring it consistently until it cooks properly and the ghee starts seeping out. As the keto also is cooking, take some lukewarm water with saffron strings. This will add flavor and color to this halwa.
Next, add stevia as a sweetener while adding color to the halwa. Keep sauteing and let the ghee seep out.
After that add almond sliver to the halwa and stir for another 2-3 minutes.Add cardamom powder to the halwa and stir properly. Put power saffron water if required.Your tasty Keto halwa is now ready to be served.
