Keto-friendly Malpua Recipe

This Navratri, you have to try my delicious keto-friendly Malpua recipe. It is a perfect, guilt-free way to add sweetness to your festivities.

Ingredients
  

Make sugar syrup:

  • Stevia 1 cup
  • Water: 1 cup Saffron strands: 7-8

For Garnishing:

  • 2 tsp Coarsely Ground Almonds
  • 1/2 tsp Cardamom Powder

For the batter:

  • 1 Cup Almond Flour ½ Cup Coconut Milk
  • 1 Cup Coconut Flour 1-2 tbsp Hung Curd
  • 1/2 tbsp Psyllium Husk 1/2 tsp Baking Powder
  • 1 tsp Coarsely Ground Peppercorns coarsely 1/2 tsp Cardamom Powder
  • 1 tsp Coriander Seeds 1 tsp Fennel Seeds

Instructions
 

For the batter:

  • Prepare the Sugar Syrup
    Take a pan over medium flame and add stevia and water in it.
    Keep boiling till the water evaporates to half.
    Add saffron strands to it for flavor.
    Keep boiling till the mixture gets a sticky consistency.
  • Make the Batter
    Take a large mixing bowl and add almond flour, coconut flour, freshly coarse peppercorns, coriander seeds, psyllium husk, cardamom powder, and a pinch of salt (to enhance its flavor). Mix well.
    Add coconut milk into the mixture along with some hung curd. Mix it while gradually adding water to make a thick batter.
  • Cook the Malpuas
    Take a frying pan and grease it with oil or ghee.
    Pour batter into the greased pan in a round malpua shape. You can make small malpuas and prepare 2-4 malpuas in a pan at once.
  • Sweet Soak
    Dip each cooked malpua into the prepared sugar syrup.
    Let it soak for about 15–20 seconds.
    Remove from the syrup and garnish with almonds and cardamom powder.
