Keto Coffee Fat Bombs Recipe

These bite-sized, energy-loaded snacks consist of a mix of mascarpone, cream cheese, and ristretto coffee (or extracted coffee). I also added some chocolate whey protein isolate to my recipe for an extra boost of energy.

- 1 cup (250 g) cream cheese
- 2 tbsp butter
- 3/4 (180g) mascarpone cheese
- 4 tbsp chocolate whey protein isolate (or any powdered sweetener of your choice)
- 1 tsp coffee extract or 25 g ristretto coffee
- A pinch of salt flakes
OPTIONAL TOPPING -
- 1 tbsp coconut oil
- 50 g dark chocolate (sugar-free)
CONVENTIONAL METHOD –
Take a large bowl to mix all the ingredients. Use a hand mixer to perfectly blend all ingredients to form a smooth consistency.
Scoop out 1 teaspoon of batter into a 30-hole silicone cup mold (or any size of your choice). Smooth the top using a teaspoon.
Once all the molds are filled, place them in the freezer for 20 to 30 minutes.
For the optional topping, you can melt coconut oil and dark chocolate. Once you take out the fat bombs from the molds, place them in a small lined baking tray to drizzle over the chocolate.
Then, again, place it into the freezer until it sets. Store it in an airtight container for savoring later.
