Keto Low-Carb Almond Cake Recipe

Low-Carb Almond Cake—is born out of one such craving. I was not trying to bake anything fancy. But something soft, warm, and sweet that wouldn’t derail my Keto goals.

Ingredients
  

  • 3 egg yolks
  • 1 tsp vanilla
  • 1/4 cup milk (60 ml)
  • 1/4 tsp salt (2 g)
  • 1 cup almond flour (112g)
  • 1/2 tsp baking powder
  • 3 egg whites
  • 1/2 tsp of vinegar
  • 2-3 tbsps of stevia
  • Some almond flakes

Instructions
 

  • Start by whisking together three eggs, vanilla, milk, and salt in a large bowl.
  • Now, add 1 cup almond flour and 1/2 tsp baking powder to the mixture. Again, mix these ingredients well.
  • In another bowl, beat three egg whites and ½ tsp vinegar using a whisker or a hand mixer.
  • When the egg white mixture turns frothy, add 2-3 tbsp of stevia or any other sweetener of your choice. Continue beating until it forms a stiff, creamy consistency.
  • Now, add a dollop of creamy egg whites to the base mixture and blend well. This will loosen the batter.
  • After that, add the remaining egg white mixtures and blend them gently.
  • Pour it into an 8x4x2-inch pan lined with parchment paper.
    Top with some almond flakes.
  • Bake in a preheated oven at 180°C/350°F for 20-25 minutes. After that, take it out of the oven and let it cool down.
    Serve with a hot cup of coffee or tea (anything you prefer).
