After all, I didn’t want to compromise with my sweet cravings even on my Keto diet. My today’s recipe—Low-Carb Almond Cake—is born out of one such craving. I was not trying to bake anything fancy. But something soft, warm, and sweet that wouldn’t derail my Keto goals.
The result? A soft, fluffy cake with subtle sweetness and nuts to satisfy my sweet tooth without kicking me out of Ketosis. Keto Low-Carb Almond Cake Recipe

- 3 egg yolks
- 1 tsp vanilla
- 1/4 cup milk (60 ml)
- 1/4 tsp salt (2 g)
- 1 cup almond flour (112g)
- 1/2 tsp baking powder
- 3 egg whites
- 1/2 tsp of vinegar
- 2-3 tbsps of stevia
- Some almond flakes
Start by whisking together three eggs, vanilla, milk, and salt in a large bowl.
Now, add 1 cup almond flour and 1/2 tsp baking powder to the mixture. Again, mix these ingredients well.
In another bowl, beat three egg whites and ½ tsp vinegar using a whisker or a hand mixer.
When the egg white mixture turns frothy, add 2-3 tbsp of stevia or any other sweetener of your choice. Continue beating until it forms a stiff, creamy consistency.
Now, add a dollop of creamy egg whites to the base mixture and blend well. This will loosen the batter.
After that, add the remaining egg white mixtures and blend them gently.
Pour it into an 8x4x2-inch pan lined with parchment paper.Top with some almond flakes. Bake in a preheated oven at 180°C/350°F for 20-25 minutes. After that, take it out of the oven and let it cool down.Serve with a hot cup of coffee or tea (anything you prefer).
