If you have been following my blog for a while now, you know I’m constantly looking for recipes that are low in carbs and rich in flavor. Keeping up with my Ketogenic Lifestyle, I’m sharing my Keto Thai Chicken Coconut Soup (or as the Thai locals call it, Tom Kha Gai). It is not just a soup; it’s more like a creamy, warm hug in a bowl. I love having it during chilly evenings or whenever I am craving something healthy yet indulgent.
This keto-approved gem is protein-packed with chicken and keeps hunger pangs at bay. Ah, and the coconut milk! It’s the smooth, velvety elixir in this recipe, taking this soup from good to heavenly. Besides adding rich texture to this recipe, it also adds healthy fats that are essential in a keto diet. I also love to add lime for a zesty twist and ginger for its aroma and health benefits. What I like the most about Thai cuisine is that it balances sweet, salty, sour, and spicy flavors without overpowering one another.
If you like more spice, you can add more chili oil to it. If you don’t like mushrooms, you can add bok choy or any other ingredient according to your preference. This recipe’s adaptability has made it one of my favorite soup recipes.
Now, let’s get into the recipe.
